about the menu

Bistro28’s menu is an interpretation of small plates. One side of the menu consists of sharable appetizers, while the other half focuses on uniquely styled main dishes. Unique as they are not comprised as “classic” entree plates, in which every dish is comprised of a protein, vegetable and a starch. We have thoughtfully paired our proteins with ingredients that will be very complementary and satisfying without necessarily putting a starch on every plate.

We strive to be as local and seasonal as possible in the choices of our ingredients. We work with many small producers from this island to give you the best that Victoria has to offer. We also offer a few worldly delicacies that cannot be sourced from Vancouver Island.  For example, our Kobe Top Sirloin is sourced from Australia, one of the world’s top 2 Kobe producers.

Everything that we serve is made in house, from our ketchup to our ice cream, our charcuterie to our bacon. Even the syrups used in the cocktails are made in house. We believe that this is the only way that we can truly control the quality of every dish that we present.

We employ many different cooking techniques to create many different textures and tastes. For example, our Sunday Roast is a sous vide Kobe Tri-Tip roast. We sear and vacuum seal the meat  before immersing it in 57˚ water (controlled by an immersion circulator) and cooking it for 5 hours to rare. People keep telling us that it is the best piece of meat that they have ever tasted. We agree!!

Our wine list is a particularly chosen boutique list, specially designed for all budgets and tastes. We offer wines from all over the world with a large selection from British Columbia. We love every wine on our list and we want you to try them, which is why over half our list is available by the glass.

Our cocktail menu is an eclectic mix of classic cocktails and modern creations, prepared with the same care and selection of ingredients as the food they accompany.
